Butter or margarine
4 tart cooking apples, peeled, quartered, cored, and thinly sliced lengthwise
10 tablespoons sugar
1/4 tsp. ground cinnamon
1/8 tsp. ground nutmeg
2 eggs
1/2 cup milk
1/4 tsp. salt
1/2 cup flour
Melt 6 T butter in large skillet over medium heat and saute apples 5 min. Mix 6 T sugar with cinnamon and nutmeg, sprinkle over apples, cover and cook over low heat 10 min. turning once or twice. Beat eggs, then beat in milk and salt; add flour and beat just until batter is smooth. In separate heavy 10 to 11 in. frying pan, melt 1 T butter to coat bottom of pan. Pour in batter. Bake in preheated 450 degree oven 15 min. (When batter puffs in center, prick with fork; repeat when necessary). Reduce heat to 350 degrees and bake 10 min. more. Spoon 2 T melted butter evenly over pancake and then fold other half over top. Sprinkle with remaining two T sugar. Cut in 6 wedges with kitchen shears and serve immediately. Note: if desired, sprinkle confectioner's sugar, instead of granulated, over pancake.

Crockpot Chili
2 lbs. ground chuck
1 cup chopped onion
1 green pepper, chopped
2 to 3 ribs celery, chopped
2 cans of chopped tomatoes, onions, peppers
1 jars of Classico, hot pepper spagetti sauce
2 cans chilli beans
1 tsp. pepper
3 tsp. chili powder
hot pepper, to taste, cayenne
1 tsp. garlic salt
shredded, mild cheddar
sour cream
In a large skillet, brown the ground beef. Add chili, onions, celery, and green peppers. Drain well. Combine all ingredients in a slow cooker; cover and cook for 4 to 6 hours on LOW, or until done. Serve with sour cream and mild cheddar.

Martha's Oatmeal Raisin Cookies
Ingredients
Makes about 5 dozen
3 cups old-fashioned rolled oats
1 cup all-purpose flour
2 tablespoons all-purpose flour
1/2 cup toasted wheat germ
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon coarse salt
1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
1 cup packed light-brown sugar
2 large eggs
1 teaspoon pure vanilla extract
1 1/2 cups raisins
Directions
Preheat oven to 350 degrees. Stir together oats, flour, wheat germ, baking soda, baking powder, cinnamon, and salt in a large bowl; set aside. Put butter and sugars in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale and fluffy, about 5 minutes. Mix in eggs and vanilla. Reduce speed to low. Add oat mixture; mix until just combined. Mix in raisins.
Using a 1 1/2-inch ice cream scoop, drop dough onto baking sheets lined with parchment paper, spacing 2 inches apart. Flatten slightly.
Bake until golden and just set, about 14 minutes. Let cool on sheets on wire racks 5 minutes. Transfer cookies to racks using a spatula; let cool completely. Cookies can be stored in airtight containers at room temperature up to 3 days.

Mama's Ham, Cheese, and Potatoes Casserole
Potatoes

White sauce made with milk, flour, and butter

Cook cubed potatoes. Spray casserole dish with PAM. Layer potatoes, cheese, and ham. Sprinkle with salt and pepper. Pour white sauce over each layer. (I usually make two layers.) Top with more cheese. Bake at 350 degrees

Country Ham

Soak ham in cold water overnight. Preheat oven to 500 degrees. Put ham in pan. Add 6 cups water and cover tightly. Cook 25 minutes. Turn oven off. Let stand 3 hours. Again preheat oven to 500 degrees and cook 25 minutes. Let stand 3 hours. Then open oven door. DO NOT OPEN OVEN DOOR UNTIL PROCESS IS COMPLETED.

Spinach and Swiss Quiche
1 pie crust (frozen--deep dish)
5 large eggs
3/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 of a 10 oz. pkg. frozen chopped spinach, thawed and squeezed dry (1/2 cup)
4 oz. Swiss cheese, shredded (1 cup)
Heat oven to 375 degrees. Whisk eggs, milk, salt, and pepper. Spread spinach into the bottom of the piecrust.
Pour egg mixture evenly over the spinach, then sprinkle the cheese. Bake 15 min. in 375 degree oven.
Reduce heat to 325 degrees and continue to bake for 20 min. until crust is puffed and brown. Let it stand for 5 min. before slicing and serving.
